Planning a rainbow-themed party? Whether you are celebrating St Patricks Day with kids or a rainbow unicorn birthday, these easy rainbow cupcakes are sure to be a hit with the kids!
My kids, like probably every other kid on the planet, love cupcakes.
And I love cute little cupcakes with fluffy cake and beautiful icing on top.
Unfortunately, I do not have the gift of baking. I mean - of course, I can whip up a boxed cake mix. But they never turn out bakery-perfect.
The perfect compromise for me is decorating store-bought cupcakes. It's quick and easy, and less expensive than paying for custom cakes.
And, I keep it easy enough that even my husband can do it, with great results.
We are getting into the St Patrick's day spirit, so I wanted a set of rainbow cupcakes for the kids.
Forget dying icing, use this simple hack instead!
Super Easy St Patrick's Day Rainbow Cupcakes
Supplies needed:
- Pre-made cupcakes
- Airheads Xtremes
- Scissors
- Marshmallows (I used minis)
Steps to decorate:
STEP 1: Prep the Cupcakes
First, you need to get your cupcakes ready. This means baked, cooled, and frosted.
Or, you can skip this step and buy pre-made cupcakes, like I did.
My kids are 4 and 6 years old, and I prefer to serve mini cupcakes at this age. They are just easier to eat and less messy!
I'd rather kids have 2 or even 3 mini cupcakes than one big one that makes a huge mess!
Anyways, get your cupcakes ready to decorate!
STEP 2: Prep the Rainbows
We are using Airheads Xtremes as the rainbows. These are about as wide as a stick of gum, gummy, and have the sour powder on them. They are much softer, thinner, and more flexible than gum.
Fold the Airhead to create the desired size rainbow. Use clean kitchen scissors to cut to the right length.
For mini cupcakes, I was able to get 3 rainbows out of each airhead strip!
STEP 3: Add to Cupcakes
Carefully add to your cupcake in a rainbow arch shape.
PRess each end into the icing carefully but firmly, until held in place.
STEP 4: Add Marshmallows
Add a marshmallow to either side of the rainbow as clouds.
For mini cupcakes, mini marshmallows are the perfect fit!
For big cupcakes, use a whole marshmallow or use scissors to cut a large one in half!
STEP 5: Enjoy!
Enjoy! Serve at a St Patricks Day party, send to school, or display them at a rainboow-themed birthday party!
Don't forget to set out any extra airheads - they were a HUGE hit with my kiddos!
