Easy Rainbow Pancake Breakfast for St. Patrick’s Day

If your kids are expecting a little leprechaun magic on St. Patrick’s Day, this is one of the easiest ways to deliver.

These rainbow pancake stacks take just a few minutes to put together but look so fun on the breakfast table. And the best part? You can use store-bought mini pancakes, because let’s be honest… it’s a school morning.

Just stack a few pancakes, add whipped cream clouds, and stretch a rainbow candy belt between them. Kids absolutely love it, and it’s the kind of simple surprise that makes a regular breakfast feel extra special.

Rainbow Pancake Stacks

This fun St. Patrick’s Day breakfast comes together in minutes but looks adorable on the plate. Kids love the rainbow surprise, and using premade pancakes keeps it quick and easy for busy mornings.

Ingredients

• Mini pancakes (premade or frozen)
• Whipped cream
• Airheads Xtremes rainbow belt candy
• Toothpicks

1. Heat the pancakes

Prepare the mini pancakes according to the package instructions.

If they’re frozen, you can microwave or air fry them until warm.

2. Build the pancake stacks

Stack 3–5 mini pancakes on top of each other to create a small tower.

Insert a toothpick through the center to hold the stack together (if needed).

Make two stacks for each rainbow breakfast plate.

3. Add the clouds

Top each pancake stack with a swirl of whipped cream. This creates the “clouds” for the rainbow.

4. Add the rainbow

Take an Airheads Xtremes rainbow belt and gently curve it between the two pancake stacks so it looks like a rainbow stretching from cloud to cloud.

I find it easier to balance if you either cut or fold the strip in half.
