Cookie Ice Cream Cups

These easy Cookie Ice Cream Cups are made with place-and-bake cookie dough and ice cream for the ultimate fun summer dessert! A simple kid-friendly treat everyone loves.

If you want a super fun summer dessert that feels a little extra special without requiring a complicated recipe, these Cookie Ice Cream Cups are SUCH a good one.

They’re made with refrigerated place-and-bake cookie dough, baked into little cookie cups, then filled with giant scoops of ice cream and your favorite toppings. They look adorable, taste amazing, and honestly feel way fancier than the amount of effort involved.

My kids thought these were the coolest dessert ever, and they’re perfect for summer parties, family movie nights, birthdays, or just a fun treat on a hot afternoon.

Cookie Ice Cream Cups

These are incredibly easy to make and can even be partially prepped ahead of time!

Ingredients

  • Place-and-bake BIG cookie dough cookies
  • Ice cream
  • Magic Shell topping
  • Sprinkles
  • Any additional toppings you like

How to Make Cookie Ice Cream Cups

Step 1: Prep the Pan

Preheat your oven according to the cookie package instructions.

Spray a muffin tin generously with nonstick cooking spray.

Step 2: Shape the Cookie Cups

Take each cookie dough portion and gently flatten it slightly between your fingers.

Place one cookie into each muffin cup and press it lightly into the bottom to create a shallow β€œnest” shape.

The dough will spread while baking, so it doesn’t need to be perfect.

Step 3: Bake

Bake according to the package instructions, adding an extra 1–2 minutes if needed.

The cookies should look golden brown and set around the edges.

Step 4: Shape the Cookie Cups While Warm

As soon as the cookies come out of the oven, use the back of an ice cream scoop to gently press down the center of each cookie.

This helps create a deeper cup shape instead of the cookies baking up flat like muffins.

Don’t skip this step β€” it makes a huge difference for holding the ice cream later!

Step 5: Cool Completely

Let the cookie cups cool completely in the muffin tin so they hold their shape properly.

Once cooled, remove them carefully from the pan. I honestly just flipped the muffin tin upside down onto a towel on the counter and gave it a little bang to release them.

You could also gently loosen them with a fork if needed.

Step 6: Add Ice Cream and Toppings

Add a big scoop of ice cream to each cookie cup.

Top with:

  • Magic Shell
  • Sprinkles
  • Chocolate sauce
  • Whipped cream
  • Crushed cookies
  • Cherries
  • Whatever your family loves!
