Some of my very favorite Christmas memories revolve around baking.
My mom always did such a good job of baking multiple batches of multiple cookies, cakes, and fudge.
One year she hosted 4 families for a Christmas party and baked each one a gingerbread house – from scratch – to decorate.
I love the memories (and the cookies!), but in this season of working-mom life, I do not have the time for all of that.
And, sure, plain cookies are fine. But if you want to take it up a notch with little to no extra effort?
Enter: the Christmas cookie cake.
You can of course use any cookie cake recipe, but using place + bake cookies makes it a super easy, 3-minute task.
And, can you resist those cute snowmen cookies? Or Santas, elves, or reindeer? I sure can’t!
I hesitate to even call this a recipe – it’s just assembly! Here’s how easy it is to make:
How to Make a Christmas Cookie Cake
Ready to get started?
Here’s what you’ll need:
- Refrigerated Chocolate Chip OR Sugar Cookie Dough
- Refrigerated Christmas-Designed Cookie Dough (Snowmen, Santas, Elves, Reindeer, etc.)
- Red or Green Icing Tube
- Christmas-Themed Sprinkles
Step-by-Step Instructions
- Shape the Dough: Press the chocolate chip/sugar cookie dough into the bottom of a round cake pan. I prefer to use a springform pan for this cake so it’s easy to remove.
- Add Sprinkles: This is optional, but I added a sprinkle of red and green sprinkles at this point, just for some extra holiday fun!
- Add Christmas Cookies: Place the Christmas-shaped cookies (I used snowmen, but you can choose your favorite) on top and gently press them into the bottom layer.
- Bake: Bake your cookie at 350°F for about 30 minutes.
- Cool: Let your cookie cake cool completely before decorating.
- Decorate: This is where the fun really begins! Use the icing to create a border or add festive designs. Add another sprinkle of holiday magic with your Christmas sprinkles.
